What you are doing with your starting procedure is by-passing the choke and high idle cam until you have the engine running.You don't have any serious horse power being put to the rear wheels where the stall would make a big difference. I would go with the stock converter. I had a turbo in my 4.3L Sonoma. The turbo didn't get spooled up until about a second or so after I was off the starting line. The 3,000 stall really helped in my case.
