I don't know specifics on respawn, but the little lake by those three well fenced houses seemed to respawn to 100% every 3 days or so. As other people have said, the bar indicating replishment is bugged until you fish in it again.You can compost almost everything, all edible stuff (including fish, non perishables, etc.), insects and even Z-parts (need to dissect them) - not whole Zs. What you can do with (whole) Z corpses is using a Kiln and produce charcoal - way easier than looking for a bag of charcoal if there are plenty of bodies everywhere.
